If you’ve been keeping up with Heart + Bowl, you might remember a colourful Fruit Skewer recipe I posted a while back? You may also remember that I designed that recipe especially for Wren Kitchens and their #LittleKitchen campaign + cookbook? The campaign hopes to inspire kids in the kitchen, to get them more involved in healthy cooking, food prep and kitchen activity.

Well, today I arrived home to find a hard copy of the cookbook waiting for me in my postbox! I was so frantically happy to see it, that I think I kind of turned into a bit of a kid myself!

The book is so beautiful and well designed, with really cute little illustrations to help attract the little ones. My Fruit Skewers feature under the Good Lookin’ Grub section, on pages 12 + 13.

I absolutely loved seeing my recipe in print alongside some great UK food bloggers. It’s so nice to see how all of the contributions have come together to form the finished product.

Following on from my obsession with avocados, I’m bringing you this Raw Courgetti Salad with Creamy Vegan Avocado Dressing! It’s been a while since my Summer King Prawn Courgetti recipe, so I thought it was about time I get spiralizing again for the blog!

One of my favourite ways to have spiralized veggies, is to smother them in this creamy vegan avocado dressing. Avocados are fast becoming one of my favourite ingredients to use, because they’re great in both savoury and sweet dishes. It’s creaminess makes it so versatile for all sorts of recipes. One of my all time favourites sweet treats is this Avocado Chocolate Mousse, which is my go-to dessert to whip up quickly on an evening.

This courgetti salad is so light and quick to make, that it makes the perfect speedy lunch or dinner in the summer months, when you don’t want to be sweating in the kitchen! You can even double up on the ingredients, and make this for a friend, or pack some up in a air-tight container and take it to work the next day!

Raw Courgetti Salad with Creamy Vegan Avocado Dressing

Serves: 1

Raw Courgetti Salad with Creamy Vegan Avocado Dressing

Ingredients

  • 1 large courgette, spiralized
  • 5 cherry tomatoes, halved
  • for the Avocado Dressing
  • 1 large ripe avocado
  • 2 garlic cloves, finely chopped
  • small handful of basil
  • juice of ½ lemon
  • ½ tsp sea salt
  • 2 tbsp olive oil
  • 2 tbsp water
  • ¼ tsp ground black pepper, optional
  • to serve
  • handful of pea shoots
  • pumpkin seeds

Instructions

  1. Add all the ingredients for the Avocado Dressing into a blender, and blitz until smooth.
  2. Transfer to a large bowl, and mix in the spiralized courgetti + cherry tomatoes until everything is well covered in the dressing.
  3. Pile the salad onto a large plate or bowl and top with a handful of pea shoots. Sprinkle with pumpkin seeds to serve!

Nothing beats getting up in the morning, knowing I’m going to tuck into this for breakfast. It’s wholesome, healthy and super filling. There’s so much beauty in it’s simplicity. Not to mention so much flavour too.

I’ve tried to keep this recipe as easy as possible, so you can realistically make it each morning. (Even if your alarm only went off 10 minutes ago and you’re still half asleep.)

This dish is also a great stress reliever. There’s nothing quite like mashing the crap out of some avocados to get out some pent-up stress.

Easy Avocado on Toast

Serves: 1

Easy Avocado on Toast

Ingredients

  • 1 large ripe avocado, stoned and peeled
  • pinch of sea salt flakes
  • juice of ¼ lime
  • gluten-free bread
  • fresh coriander, to garnish

Instructions

  1. Roughly mash the avocado with a pinch of sea salt.
  2. Cut a lime into four and squeeze in the juice from one of the wedges. Mix until well combined.
  3. Toast some gluten-free bread. Once toasted, pile on the mashed avocado.
  4. Garnish with fresh coriander + a sprinkle of sea salt.

Notes

Why not try topping with some pumpkins seeds or a pinch of chilli flakes? Non-vegans can also top with a fried egg!
